In a small town, close to everywhere and far from anywhere, in Madrid, to the west, not far from San Lorenzo de El Escorial, in 1991 Quesos La Cabezuela was born from the dream of producing a cheese based on the traditions. High quality cheese and yogurt made with milk from local goats from the mountains of Madrid, the Cabra del Guadarrama. Its elaboration and ingredients are natural par excellence in their totality and artisans, where the man’s hand plays an important role.
Our cheeses and yogurts are the result of a dream come true of the Rayuela-Campos family. Cheeses are born from the experience, the work of many years and from the constant inspiration of the European ways of working of the milk. We are inspired by other techniques of milk processing, to obtain unique cheeses and different to our country cheese traditions, this allows us to have, a source of gastronomic wealth and a reference for all the people of Madrid.
The production of cheese is done everyday as well as the collection of milk and after the time of maturation – when it was for cheese lovers of its varieties-, the curd. A soft cheese, with the nuances of Guadarrama goat milk, from the pastures of the area, based on thyme, acorn, heather, grass. The cheeses, due to their careful preparation, completely handmade, breaking the themes of common goat cheese, for its mild, sweet milk flavor, with touches of natural food plants Guadarrama goat breed. They are tastier cheeses with autumn-winter milk, although they are available all year round, with the production being quite stable.
